This course is designed for food safety professionals at all levels to understand, develop, implement and maintain an appropriate and effective Environmental Monitoring Programme in one’s food plant.


Course Description

The course covers the following as a minimum:

  • When a PEM/EMP is appropriate
  • Elements of a PEM/EMP
  • Appropriate zoning for an effective PEM/EMP
  • When and which pathogens to target for in a PEM/EMP
  • Testing, sampling, corrective actions and more…..

  • A clear understanding of what a PEM/EMP is and when it is appropriate
  • A clear understanding of all elements of an effective PEM/EMP
  • A clear understanding of implementing zoning for an effective PEM/EMP
  • A clear understanding of the type of PEM/EMP that is needed for specific food  plants
  • A clear understanding of integrating PEM/EMP into an effective food safety management system
  • Ability to effectively manage a PEM/EMP
  • A clear understanding of techniques and tools for environmental sampling


Prerequisites

Knowledge of  food microbiology.

Any food safety professional at any level in the food industry who wishes to correctly and effectively implement a PEM/EMP.  This course is also applicable to retailers who wish to understand what an effective PEM/EMP is and what they could expect from such a programme at their supplier level.
